Menu Plan Monday

Another week, another meal plan! We did pretty well with our plan last week. We had an unexpected pizza night after Brooke’s daycare closed on us unexpectedly and I attempted to work at home with Brooke. Oy!! We really enjoyed the Taco Pie so Keith has requested that go in our regular meal rotation. I’ve actually started a board in Pinterest for those meals that are tried and true for our family. When I’m hitting a roadblock with our meal plan, I’ll look there to find something I know is a hit for everyone!

We’ve got a couple new recipes in the plan this week.

Down Home Macaroni & Cheese
Taco Pasta
Crockpot Chicken & Dumplings
Black Bean & Cheese Enchiladas
Slow Cooker Cheesy Italian Tortellini
Black Bean Burgers

Meal Plan Monday – January 9 – 15

Its probably not a shock that with the new year here, I’ve re-committed to meal planning. We’ve kept up with eating at home majority of the time but we were still spending more than we had to because due to not planning ahead I found myself making last minute stops at the grocery store.

So here’s the plan for this week:
English Muffin Pizzas
Crockpot Chicken & Dumplings
Taco Pie (my forum friend Amanda told me about this one – excited to try it!!)
Meatballs over Noodles
Paninis
Leftovers

I have to say meal planning and grocery shopping would be a trillion times harder if I didn’t use ZipList. Are y’all familiar with it? Would you be interested in a post about it and how I use it? Drop me a comment and let me know!!

Menu Plan Monday – November 7

Keith has lots of events this week so it will be just Brooke and me for dinner most nights. I considered using that as license to not do any planning but decided that probably isn’t a great idea. Then I thought I would plan mostly small, easy meals but realized then there might not be anything for Keith to eat when he finally got home. If I make the same meals I would normally, best case scenario is that he can warm it up when he gets home and worst case scenario will be that will have leftovers for lunch or another night.

Another reason I had no excuse to skimp on a plan this week, we didn’t get to all our planned meals last week. So I’m carrying over a couple of those to this week!

Cowboy Spaghetti
Goulash
Chicken Broccoli Rice Casserole
Mac n’ Cheese
Pumpkin Pancakes
Quesadillas or Grilled Cheese
