Weekly Meal Plan – February 1, 2015

The first month of 2015 has come and gone but I’m still committed to being more intentional – my ONE WORD for the year. I’ve gotten my meal plan done just about every week but haven’t had the time to post them up here.

Yesterday I was a rock start and got so much done – including prepping for this week’s meals. The Chicken Noodle Casserole is something we had for dinner last week but I made two so we’re eating the extra one this week. Chili has been made and is in the fridge. I’m hoping to get the Turkey Meatloaf Bites made today.

In my Day In The Life post earlier this week, I mentioned that even though it was a Thursday, which we’ve designated as Grilled Cheese & Popcorn Night, we had breakfast burritos due to the lack of bread in the pantry. Those breakfast burritos were a hit so we’re making those a much more regular thing! Right now I’m putting them in Fridays to alternate with pizza nights. I’ll probably also keep them on deck for nights that are busy for one reason or another.

Needless to say, I’m feeling good going into this week!! Here’s the meal plan:

Meal Plan February 1, 2015

Super Bowl Sunday – Brats & hot dogs, chicken wings and assorted snacky stuff
Monday – Chicken Noodle Casserole from the freezer
Tuesday – Chili that’s waiting in the fridge
Wednesday – Cheesy Turkey Meatloaf Bites
Thursday – Grilled Cheese & Popcorn Night
Friday – Breakfast Burritos

Weekly Meal Plan – Going For Two

Menu Plan Monday

This weekend Brooke had her first sleepover at our house and Keith was traveling with the football team so I’m impressed that I had time to get a meal plan together and grocery shop on Sunday. Not only that, I went ahead and planned for two weeks! Whoop!!

So here goes:

Meatball Subs
Chili – already made and in the fridge to be heated up!
Alton Brown’s Stove Top Mac n’ Cheese – Brooke’s suggestion for the meal plan
Where’s The Crust Pizza – I’be been wanting to try this for awhile. It should be perfect for Friday Pizza Night.
Creamy Broccoli Chicken Shells & Cheese – I’ve been wanting to try this recipe for a copule weeks and its definitely happening this time!
Skinny Salisbury Steak with Mushrooms – I had lunch with Brooke at her school on her birthday and salisbury steak was on the menu. I’ve been craving it, but good, since then.
Chicken Broccoli Rice Casserole – I have another one of these in the freezer if I need it!

In addition to these recipes, I also stocked up on a few quickies that I can throw together when needed:
Southern-Style Chicken Filets – Aldi carries these and they are like Chick-Fil-A chicken. We throw them on buns with the pickle and everything.
Hot Dogs
Hamburgers
Grilled Cheese & Popcorn – our regular Thursday night dinner

Throw in a leftover night or two and another night or two of eating out and we’ve got two weeks of meals planned and ready to get on the table. I’ll update next Monday and we’ll see how this two weeks at a time method is working for us.

Weekly Menu Plan – Impromptu Pantry Challenge

Menu Plan Monday

I had a great plan in place for this coming week’s dinner. I had a good mix of new recipes and family-approved meals. I’d written out the shopping list, organized by category. Brooke and I headed to Aldi, did a pretty good job sticking to the list and were checkout when everyone’s nightmare came true for me.

“DECLINED” flashed on the display of the cash register.

Apparently, the expiration date had passed on our debit card. Honest mistake I suppose but it felt horrible all the same. And honestly, the embarrassment of being declined was nothing compared to how bad I felt when the more-understanding-that-necessary Manager assured me he didn’t mind putting ALL.MY.ITEMS. back. What a shopping trip!!

So, since we couldn’t buy anything, we will be eating from the pantry this week. Luckily, on our trip last week I grabbed a few things that we didn’t NEED that week but I wanted to be stocked up on. That’s going to be a huge help!!

Breakfast

English Muffins, French Toast Bites, Waffles, Protein Shakes, Granola & Yogurt

Lunch

Lots of leftovers for me, I also threw together a couple Mason Jar Salads from chicken leftover from tonight’s dinner
Brooke will have her regulars – sandwiches, crackers, applesauce, cheese, carrots, etc.
Keith should be able to get by on the amount of lettuce and salad fixin’s for at least a couple days

Dinner

Monday – Spaghetti w/ Meatballs or Meat Sauce
Tuesday – using one of our last vouchers for Hot Rod’s 50s Diner – a family favorite restaurant
Wednesday – Country Girl Mac n’ Cheese (name Brooke came up with for Mac n’ Cheese with hot dogs)
Thursday – Grilled Cheese & Popcorn Night!!!
Friday – Burgers & Fries

Have you ever had an embarrassing experience like that at a store? I’ll be perfectly fine to never live through that again!!
